Ingredients
- Brown lentils - 150 grams
- Water - 500 ml
- Cooked quinoa - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, finely chopped
- Carrot - 1 small, grated
- Breadcrumbs (gluten-free if needed) - 50 grams
- Cornstarch - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Burger buns (gluten-free if needed) - 2
- Kimchi - 100 grams, chopped
- Cabbage - 100 grams, shredded
- Rice vinegar - 1 tablespoon
- Chili paste (gochujang) - 1 teaspoon
Steps
- Rinse the brown lentils under cold water and combine them with 500 ml of water in a pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until tender. Drain any excess water.
- In a large bowl, mash the cooked lentils with a fork or potato masher. Add the cooked quinoa, minced garlic, grated ginger, soy sauce, sesame oil, green onions, grated carrot, breadcrumbs, cornstarch, salt, and black pepper. Mix well until combined.
- Divide the mixture into two equal portions and shape each into a burger patty. Refrigerate for about 10 minutes to firm up.
- While the patties chill, prepare the kimchi slaw by mixing the chopped kimchi, shredded cabbage, rice vinegar, and chili paste in a bowl. Set aside.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- Toast the burger buns lightly on the skillet for 1-2 minutes.
- Assemble the burgers by placing each lentil patty on a bun and topping with the kimchi slaw. Serve immediately.
