Ingredients

  • Kimchi - 200 grams
  • Pork belly, diced - 150 grams
  • Tofu, firm, diced - 100 grams
  • Green onions, chopped - 2 stalks
  • Garlic, minced - 3 cloves
  • Ginger, minced - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Water - 500 milliliters
  • Korean red pepper flakes (Gochugaru) - 1 tablespoon
  • Mushrooms, sliced - 100 grams
  • Zucchini, sliced - 100 grams

Steps

  1. In a pot, heat the sesame oil over medium heat and add the diced pork belly. Cook until browned, about 5 minutes.
  2. Add the minced garlic and ginger to the pot, stirring for 1 minute until fragrant.
  3. Stir in the kimchi and Korean red pepper flakes, cooking for another 3 minutes to release the flavors.
  4. Pour in the water and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
  5. Add the diced tofu, sliced mushrooms, and zucchini to the pot. Stir gently and simmer for an additional 10 minutes.
  6. Finally, stir in the soy sauce and chopped green onions, cooking for another 2 minutes before serving.
