- Kimchi - 200 grams
- Pork belly, diced - 150 grams
- Tofu, firm, diced - 100 grams
- Green onions, chopped - 2 stalks
- Garlic, minced - 3 cloves
- Ginger, minced - 1 teaspoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Water - 500 milliliters
- Korean red pepper flakes (Gochugaru) - 1 tablespoon
- Mushrooms, sliced - 100 grams
- Zucchini, sliced - 100 grams
Steps
- In a pot, heat the sesame oil over medium heat and add the diced pork belly. Cook until browned, about 5 minutes.
- Add the minced garlic and ginger to the pot, stirring for 1 minute until fragrant.
- Stir in the kimchi and Korean red pepper flakes, cooking for another 3 minutes to release the flavors.
- Pour in the water and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
- Add the diced tofu, sliced mushrooms, and zucchini to the pot. Stir gently and simmer for an additional 10 minutes.
- Finally, stir in the soy sauce and chopped green onions, cooking for another 2 minutes before serving.
