Ingredients

  • Pork belly - 400 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce (low-sodium) - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions (sliced) - 2 stalks
  • Lettuce leaves (for serving) - 6 leaves
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Stevia or erythritol (optional for sweetness) - 1 teaspoon

Steps

  1. In a bowl, combine the sesame oil, soy sauce, minced garlic, grated ginger, black pepper, and sliced green onions to create a marinade.
  2. Cut the pork belly into thick slices (about 1 cm) and add them to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Once hot, place the marinated pork belly slices on the grill. Grill for about 3-4 minutes on each side, or until they are crispy and cooked through.
  5. While the pork is grilling, mix the gochujang with stevia or erythritol in a small bowl to create a dipping sauce.
  6. To serve, place grilled pork belly slices on a plate with lettuce leaves. Use the lettuce leaves to wrap the pork and dip into the gochujang sauce.
