  • Green beans - 200 grams

  • Red bell pepper - 1, thinly sliced
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Trim the ends of the green beans and blanch them in boiling water for 2-3 minutes until bright green and tender-crisp.
  2. Immediately transfer the green beans to an ice bath to stop the cooking process, then drain and set aside.
  3. In a large mixing bowl, combine the sesame oil, soy sauce, rice vinegar, minced garlic, salt, and pepper to make the dressing.
  4. Add the blanched green beans, julienned carrot, and sliced red bell pepper to the bowl with the dressing.
  5. Toss everything together until the vegetables are well coated in the dressing.
  6. Sprinkle sesame seeds and chopped green onions over the salad, and toss gently once more.
  7. Serve immediately or let it chill in the refrigerator for 10 minutes for enhanced flavors.
