Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Garlic - 6 cloves, minced
  • Soy sauce - 60 ml
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Erythritol - 1 tablespoon (or any low-carb sweetener)
  • Green onions - 2, chopped
  • Ginger - 1 teaspoon, minced
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cauliflower rice - 400 grams

Steps

  1. In a bowl, mix the soy sauce, minced garlic, sesame oil, rice vinegar, erythritol, minced ginger, and black pepper to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade. Let it marinate for at least 15 minutes.
  3. Heat olive oil in a large skillet over medium heat. Add the marinated chicken to the skillet and cook for about 8-10 minutes, or until cooked through and browned.
  4. While the chicken is cooking, heat another skillet over medium heat and add the cauliflower rice. Sauté for 5-7 minutes until tender and heated through.
  5. Once the chicken is fully cooked, stir in the chopped green onions and cook for an additional 1-2 minutes.
  6. Serve the garlic chicken over cauliflower rice and garnish with extra green onions if desired.
