- Chicken thighs - 400 grams, boneless and skinless
- Garlic - 6 cloves, minced
- Soy sauce - 60 ml
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Erythritol - 1 tablespoon (or any low-carb sweetener)
- Green onions - 2, chopped
- Ginger - 1 teaspoon, minced
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Cauliflower rice - 400 grams
Steps
- In a bowl, mix the soy sauce, minced garlic, sesame oil, rice vinegar, erythritol, minced ginger, and black pepper to create the marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade. Let it marinate for at least 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add the marinated chicken to the skillet and cook for about 8-10 minutes, or until cooked through and browned.
- While the chicken is cooking, heat another skillet over medium heat and add the cauliflower rice. Sauté for 5-7 minutes until tender and heated through.
- Once the chicken is fully cooked, stir in the chopped green onions and cook for an additional 1-2 minutes.
- Serve the garlic chicken over cauliflower rice and garnish with extra green onions if desired.
