Ingredients

  • Chicken thighs - 300 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Egg - 1 large
  • Buttermilk - 100 ml
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Honey - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - for frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Sliced cucumbers - 50 grams
  • Sliced radishes - 50 grams

Steps

  1. In a bowl, mix buttermilk, gochujang, honey, soy sauce, garlic powder, onion powder, salt, and black pepper to create a marinade.
  2. Cut the chicken thighs into burger-sized pieces and soak them in the marinade for at least 15 minutes.
  3. In another bowl, combine all-purpose flour and cornstarch for the coating.
  4. Heat vegetable oil in a deep pan over medium-high heat for frying.
  5. Remove chicken from the marinade and coat each piece in the flour and cornstarch mixture, shaking off any excess.
  6. Fry the chicken pieces in the hot oil until golden brown and crispy, about 5-7 minutes per side. Ensure the internal temperature reaches 75°C (165°F).
  7. Remove the fried chicken and place it on paper towels to drain excess oil.
  8. Toast the burger buns lightly on a skillet or grill.
  9. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the fried chicken, sliced cucumbers, and sliced radishes. Top with the other half of the bun.
  10. Serve immediately with your favorite dipping sauce or enjoy as is.
