- All-purpose flour - 100 grams
- Cornstarch - 50 grams
- Egg - 1 large
- Buttermilk - 100 ml
- Gochujang (Korean chili paste) - 2 tablespoons
- Honey - 1 tablespoon
- Soy sauce - 1 tablespoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - for frying
- Burger buns - 2
- Lettuce leaves - 2
- Sliced cucumbers - 50 grams
- Sliced radishes - 50 grams
Steps
- In a bowl, mix buttermilk, gochujang, honey, soy sauce, garlic powder, onion powder, salt, and black pepper to create a marinade.
- Cut the chicken thighs into burger-sized pieces and soak them in the marinade for at least 15 minutes.
- In another bowl, combine all-purpose flour and cornstarch for the coating.
- Heat vegetable oil in a deep pan over medium-high heat for frying.
- Remove chicken from the marinade and coat each piece in the flour and cornstarch mixture, shaking off any excess.
- Fry the chicken pieces in the hot oil until golden brown and crispy, about 5-7 minutes per side. Ensure the internal temperature reaches 75°C (165°F).
- Remove the fried chicken and place it on paper towels to drain excess oil.
- Toast the burger buns lightly on a skillet or grill.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the fried chicken, sliced cucumbers, and sliced radishes. Top with the other half of the bun.
- Serve immediately with your favorite dipping sauce or enjoy as is.
