Ingredients

  • White fish fillets (such as cod or tilapia) - 250 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onion - 2 stalks, finely chopped
  • Panko breadcrumbs - 50 grams
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Kimchi - 100 grams, chopped
  • Mayonnaise - 1 tablespoon
  • Sriracha - 1 teaspoon

Steps

  1. In a bowl, combine the minced garlic, grated ginger, soy sauce, sesame oil, chopped green onion, panko breadcrumbs, beaten egg, salt, and black pepper.
  2. Finely chop the white fish fillets and add them to the mixture, stirring until well combined.
  3. Form the fish mixture into two burger patties.
  4. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, prepare the kimchi slaw by mixing the chopped kimchi, mayonnaise, and sriracha in a small bowl.
  6. Toast the burger buns lightly in the skillet for 1-2 minutes.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, adding the fish patty, and topping it with the kimchi slaw. Place the top half of the bun on each burger.
  8. Serve immediately with your choice of side.
