- Zucchini - 50 grams, finely grated
- Green onion - 2 stalks, finely chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Cooking oil - 1 tablespoon for frying
Steps
- In a mixing bowl, beat the eggs with soy sauce, sesame oil, salt, and black pepper until well combined.
- Add the grated carrot, zucchini, and chopped green onion to the egg mixture, stirring until evenly distributed.
- Heat a non-stick frying pan over medium heat and add cooking oil, ensuring it coats the surface.
- Pour a portion of the egg mixture (about 1/3) into the pan, tilting to spread it evenly across the surface.
- Cook for about 2-3 minutes until the edges start to set, then gently roll the omelet from one side to the other using a spatula.
- Push the rolled omelet to one side of the pan, then pour another portion of the egg mixture into the empty space, allowing it to cook and cover the rolled omelet.
- Once the new layer sets, roll the omelet again, incorporating the previous roll, and repeat the process until all egg mixture is used.
- Transfer the finished egg roll to a cutting board and let it cool slightly before slicing into bite-sized pieces.
- Serve warm or at room temperature, optionally drizzling with additional soy sauce.
