Ingredients

  • Basmati rice - 150 grams
  • Chicken breast (halal) - 200 grams, diced
  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Korean curry powder - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Water - 500 ml
  • Salt - to taste
  • Green onion - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger to the pot, cooking for an additional 1-2 minutes until fragrant.
  4. Stir in the diced chicken breast and cook until browned on all sides.
  5. Add the sliced carrot and diced potato, mixing well with the chicken and onions.
  6. Sprinkle the Korean curry powder over the mixture, stirring to coat the vegetables and chicken evenly.
  7. Pour in the water and soy sauce, bring the mixture to a boil, then reduce heat to low and cover. Simmer for 20 minutes or until the vegetables are tender.
  8. While the curry simmers, cook the soaked basmati rice in a separate pot with 250 ml of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the rice is fluffy.
  9. Once the curry is ready, season with salt to taste. Serve the curry over the cooked rice and garnish with chopped green onion.
