- Basmati rice - 150 grams
- Chicken breast (halal) - 200 grams, diced
- Carrot - 1 medium, sliced
- Potato - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Korean curry powder - 2 tablespoons
- Soy sauce - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Water - 500 ml
- Salt - to taste
- Green onion - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger to the pot, cooking for an additional 1-2 minutes until fragrant.
- Stir in the diced chicken breast and cook until browned on all sides.
- Add the sliced carrot and diced potato, mixing well with the chicken and onions.
- Sprinkle the Korean curry powder over the mixture, stirring to coat the vegetables and chicken evenly.
- Pour in the water and soy sauce, bring the mixture to a boil, then reduce heat to low and cover. Simmer for 20 minutes or until the vegetables are tender.
- While the curry simmers, cook the soaked basmati rice in a separate pot with 250 ml of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the rice is fluffy.
- Once the curry is ready, season with salt to taste. Serve the curry over the cooked rice and garnish with chopped green onion.
