Ingredients

  • Whole wheat pizza dough - 200 grams
  • Korean curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Shredded mozzarella cheese - 100 grams
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Baby spinach - 50 grams
  • Green onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, mix the Korean curry paste with coconut milk until well combined.
  3. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  4. Transfer the rolled dough to a baking sheet lined with parchment paper.
  5. Spread the curry mixture evenly over the dough, leaving a small border around the edges.
  6. Sprinkle the shredded mozzarella cheese over the curry sauce.
  7. Distribute the sliced red bell pepper, zucchini, and baby spinach evenly on top of the cheese.
  8. Drizzle sesame oil over the vegetables and season with salt and black pepper.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
  10. Remove from the oven, garnish with chopped green onions and sesame seeds, and slice into wedges.
