Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Brown rice - 100 grams (cooked)
  • Carrot - 1 medium, grated
  • Green onion - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced
  • Vegan mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 tablespoon

Steps

  1. In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the cooked brown rice, grated carrot, chopped green onion, minced garlic, grated ginger, curry powder, soy sauce, sesame oil, cornstarch, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Divide the mixture into two equal portions and form into patties.
  4. Heat a non-stick skillet over medium heat and add a little sesame oil. Cook the patties for about 5-6 minutes on each side until golden brown and crispy.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly on another skillet or in a toaster.
  6. Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, adding a lettuce leaf, the chickpea curry patty, tomato slices, and avocado. Drizzle sriracha sauce on top if desired, then place the top bun.
  7. Serve immediately with a side of your choice.
