Ingredients

  • Chayote - 1 medium (about 200g)
  • Carrot - 1 small (about 50g)
  • Cucumber - 1 small (about 100g)
  • Green onion - 2 stalks
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Sesame seeds - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the chayote, carrot, and cucumber thoroughly. Peel the chayote and carrot; leave the cucumber unpeeled.
  2. Julienne the chayote, carrot, and cucumber into thin strips. Slice the green onions into small pieces.
  3. In a mixing bowl, combine the sesame oil, soy sauce, rice vinegar, minced garlic, salt, and black pepper. Whisk until well mixed.
  4. Add the julienned vegetables and green onions to the dressing. Toss until all the vegetables are coated evenly.
  5. Let the salad sit for about 5 minutes to allow the flavors to meld.
  6. Sprinkle sesame seeds on top before serving. Serve chilled or at room temperature.
