- Cauliflower - 300 grams, riced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, chopped
- Carrot - 50 grams, diced
- Red bell pepper - 50 grams, diced
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 teaspoon
- Egg - 1 large, beaten
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the diced carrot and red bell pepper, cooking for 2-3 minutes until slightly tender.
- Add the riced cauliflower to the skillet, mixing well with the vegetables.
- Pour in the soy sauce and sesame oil, stirring to combine everything evenly.
- Push the cauliflower mixture to one side of the skillet and pour the beaten egg into the other side, scrambling it until fully cooked.
- Mix the scrambled egg into the cauliflower rice, adding salt and black pepper to taste.
- Remove from heat and stir in the chopped green onion.
- Serve hot, garnished with sesame seeds.
