Ingredients

  • Cauliflower - 300 grams, riced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, chopped
  • Carrot - 50 grams, diced
  • Red bell pepper - 50 grams, diced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Egg - 1 large, beaten
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the diced carrot and red bell pepper, cooking for 2-3 minutes until slightly tender.
  4. Add the riced cauliflower to the skillet, mixing well with the vegetables.
  5. Pour in the soy sauce and sesame oil, stirring to combine everything evenly.
  6. Push the cauliflower mixture to one side of the skillet and pour the beaten egg into the other side, scrambling it until fully cooked.
  7. Mix the scrambled egg into the cauliflower rice, adding salt and black pepper to taste.
  8. Remove from heat and stir in the chopped green onion.
  9. Serve hot, garnished with sesame seeds.
