Ingredients

  • Beef sirloin - 200 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Honey - 1 teaspoon
  • Eggs - 4 large
  • Green onions - 2, chopped
  • Tortillas - 4 small (kosher)
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Kimchi - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 1 tablespoon

Steps

  1. In a bowl, combine soy sauce, sesame oil, minced garlic, and honey. Add the beef sirloin, cut into thin strips, and marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat and add the marinated beef. Cook for about 5-7 minutes until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add a bit of vegetable oil if needed, and scramble the eggs, seasoning with salt and black pepper. Cook until just set and remove from heat.
  4. Warm the tortillas in a dry skillet or microwave until soft.
  5. Assemble the tacos by placing a portion of cooked beef, scrambled eggs, julienned cucumber, and carrot on each tortilla. Top with kimchi and sprinkle with chopped green onions.
  6. Fold the tortillas and serve warm.
