- Beef sirloin - 200 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Honey - 1 teaspoon
- Eggs - 4 large
- Green onions - 2, chopped
- Tortillas - 4 small (kosher)
- Cucumber - 1 small, julienned
- Carrot - 1 small, julienned
- Kimchi - 100 grams
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - 1 tablespoon
Steps
- In a bowl, combine soy sauce, sesame oil, minced garlic, and honey. Add the beef sirloin, cut into thin strips, and marinate for at least 15 minutes.
- Heat a skillet over medium-high heat and add the marinated beef. Cook for about 5-7 minutes until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add a bit of vegetable oil if needed, and scramble the eggs, seasoning with salt and black pepper. Cook until just set and remove from heat.
- Warm the tortillas in a dry skillet or microwave until soft.
- Assemble the tacos by placing a portion of cooked beef, scrambled eggs, julienned cucumber, and carrot on each tortilla. Top with kimchi and sprinkle with chopped green onions.
- Fold the tortillas and serve warm.
