Ingredients

  • Shiitake mushrooms - 200 grams
  • Soy sauce - 30 ml
  • Sesame oil - 10 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 1 stalk, chopped
  • Korean red pepper flakes (gochugaru) - 1 teaspoon
  • Water - 100 ml
  • Black sesame seeds - 1 teaspoon for garnish

Steps

  1. Clean the shiitake mushrooms by wiping them with a damp cloth and slice them into quarters.
  2. In a medium skillet, heat the sesame oil over medium heat and add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the sliced mushrooms to the skillet and sauté for about 5 minutes until they start to soften.
  4. Pour in the soy sauce, water, and sprinkle the gochugaru over the mushrooms, stirring to combine.
  5. Reduce the heat to low, cover the skillet, and let the mushrooms braise for 15-20 minutes, stirring occasionally, until the liquid is reduced and the mushrooms are tender.
  6. Once cooked, remove from heat and garnish with chopped green onions and black sesame seeds before serving.
