- Sesame oil - 10 ml

- Ginger - 1 teaspoon, grated
- Green onion - 1 stalk, chopped
- Korean red pepper flakes (gochugaru) - 1 teaspoon
- Water - 100 ml
- Black sesame seeds - 1 teaspoon for garnish
Steps
- Clean the shiitake mushrooms by wiping them with a damp cloth and slice them into quarters.
- In a medium skillet, heat the sesame oil over medium heat and add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced mushrooms to the skillet and sauté for about 5 minutes until they start to soften.
- Pour in the soy sauce, water, and sprinkle the gochugaru over the mushrooms, stirring to combine.
- Reduce the heat to low, cover the skillet, and let the mushrooms braise for 15-20 minutes, stirring occasionally, until the liquid is reduced and the mushrooms are tender.
- Once cooked, remove from heat and garnish with chopped green onions and black sesame seeds before serving.
