Ingredients

  • Daikon radish - 300 grams
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Erythritol (or any keto-friendly sweetener) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 1 stalk, chopped
  • Water - 200 ml
  • Sesame seeds - 1 teaspoon, toasted

Steps

  1. Peel the daikon radish and cut it into thin half-moon slices.
  2. In a medium-sized saucepan, combine soy sauce, sesame oil, rice vinegar, erythritol, minced garlic, grated ginger, and water. Stir well to create the braising liquid.
  3. Add the sliced daikon to the saucepan and bring the mixture to a boil over medium heat.
  4. Once boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 20 minutes, or until the daikon is tender.
  5. Remove the lid and increase the heat to medium-high. Cook for an additional 5 minutes, allowing the sauce to thicken slightly.
  6. Transfer the braised daikon to a serving dish, sprinkle with chopped green onion and toasted sesame seeds before serving.
