- Daikon radish - 300 grams
- Soy sauce (low sodium) - 2 tablespoons

- Rice vinegar - 1 tablespoon
- Erythritol (or any keto-friendly sweetener) - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 1 stalk, chopped
- Water - 200 ml
- Sesame seeds - 1 teaspoon, toasted
Steps
- Peel the daikon radish and cut it into thin half-moon slices.
- In a medium-sized saucepan, combine soy sauce, sesame oil, rice vinegar, erythritol, minced garlic, grated ginger, and water. Stir well to create the braising liquid.
- Add the sliced daikon to the saucepan and bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 20 minutes, or until the daikon is tender.
- Remove the lid and increase the heat to medium-high. Cook for an additional 5 minutes, allowing the sauce to thicken slightly.
- Transfer the braised daikon to a serving dish, sprinkle with chopped green onion and toasted sesame seeds before serving.
