Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground beef - 250g
  • Soy sauce - 30ml
  • Sesame oil - 10ml
  • Brown sugar substitute - 10g
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Using a spiralizer, create zoodles from the zucchini and set aside.
  2. In a bowl, mix soy sauce, sesame oil, brown sugar substitute, minced garlic, grated ginger, red pepper flakes, salt, and black pepper to create the marinade.
  3. Add the ground beef to the marinade, mix well, and let it marinate for 10 minutes.
  4. Heat a non-stick skillet over medium-high heat and add the marinated beef, cooking until browned and cooked through, about 5-7 minutes.
  5. Once the beef is cooked, push it to one side of the skillet and add the zoodles to the other side, sautéing for 2-3 minutes until slightly tender.
  6. Combine the beef and zoodles in the skillet, tossing them together to mix.
  7. Serve hot, garnished with chopped green onions and sesame seeds.
