- Beef tenderloin - 200 grams
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 1 clove, minced
- Scallions - 2, finely chopped
- Gochujang (Korean chili paste) - 1 teaspoon
- Honey - 1 teaspoon
- Black pepper - to taste
- Egg yolk - 1, from a fresh egg
- Toasted sesame seeds - 1 teaspoon
- Seaweed (nori) - 1 sheet, cut into strips
Steps
- Finely chop the beef tenderloin into small cubes and place it in a mixing bowl.
- Add soy sauce, sesame oil, minced garlic, chopped scallions, gochujang, honey, and black pepper to the bowl.
- Gently mix all the ingredients until well combined, being careful not to mash the beef.
- Divide the tartare mixture onto two plates, forming a small mound in the center of each plate.
- Make a small indentation in the center of each tartare mound and carefully place an egg yolk in each indentation.
- Sprinkle toasted sesame seeds over the top and garnish with strips of nori.
- Serve immediately with additional sesame oil or gochujang on the side if desired.
