Ingredients

  • Beef tenderloin - 200 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Scallions - 2, finely chopped
  • Gochujang (Korean chili paste) - 1 teaspoon
  • Honey - 1 teaspoon
  • Black pepper - to taste
  • Egg yolk - 1, from a fresh egg
  • Toasted sesame seeds - 1 teaspoon
  • Seaweed (nori) - 1 sheet, cut into strips

Steps

  1. Finely chop the beef tenderloin into small cubes and place it in a mixing bowl.
  2. Add soy sauce, sesame oil, minced garlic, chopped scallions, gochujang, honey, and black pepper to the bowl.
  3. Gently mix all the ingredients until well combined, being careful not to mash the beef.
  4. Divide the tartare mixture onto two plates, forming a small mound in the center of each plate.
  5. Make a small indentation in the center of each tartare mound and carefully place an egg yolk in each indentation.
  6. Sprinkle toasted sesame seeds over the top and garnish with strips of nori.
  7. Serve immediately with additional sesame oil or gochujang on the side if desired.
