- Beef chuck roast - 400 grams, cut into 2.5 cm cubes
- Beef broth - 500 ml
- Soy sauce (low sodium) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Radish (daikon) - 100 grams, sliced
- Green onions - 2, chopped
- Red chili flakes - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Coconut aminos - 1 tablespoon
- Mushrooms (shiitake or button) - 100 grams, sliced
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.
- Add the beef cubes to the pot and brown them on all sides, approximately 5-7 minutes.
- Pour in the beef broth, soy sauce, and coconut aminos. Bring to a gentle simmer.
- Add the sliced radish, mushrooms, and red chili flakes to the pot. Stir to combine.
- Cover the pot and let it simmer on low heat for 60 minutes, stirring occasionally, until the beef is tender.
- Once the beef is tender, taste and adjust seasoning with black pepper if needed.
- Serve hot, garnished with chopped green onions.
