  • Beef chuck roast - 400 grams, cut into 2.5 cm cubes
  • Beef broth - 500 ml
  • Soy sauce (low sodium) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Radish (daikon) - 100 grams, sliced
  • Green onions - 2, chopped
  • Red chili flakes - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut aminos - 1 tablespoon
  • Mushrooms (shiitake or button) - 100 grams, sliced

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.
  2. Add the beef cubes to the pot and brown them on all sides, approximately 5-7 minutes.
  3. Pour in the beef broth, soy sauce, and coconut aminos. Bring to a gentle simmer.
  4. Add the sliced radish, mushrooms, and red chili flakes to the pot. Stir to combine.
  5. Cover the pot and let it simmer on low heat for 60 minutes, stirring occasionally, until the beef is tender.
  6. Once the beef is tender, taste and adjust seasoning with black pepper if needed.
  7. Serve hot, garnished with chopped green onions.
