Ingredients

  • Rice noodles - 150 grams
  • Soy sauce - 3 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Cilantro - 2 tablespoons, chopped
  • Sesame seeds - 1 tablespoon
  • Water - 500 ml

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a small bowl, mix together the soy sauce, gochujang, and sesame oil to create the sauce.
  3. In a large pan or wok, heat a tablespoon of sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  4. Add the julienned carrot and sliced bell pepper to the pan, stirring frequently for about 5-7 minutes until the vegetables are tender.
  5. Pour the sauce over the sautéed vegetables and stir well to combine, cooking for an additional 2 minutes.
  6. Add the cooked rice noodles to the pan, tossing to ensure the noodles are well-coated with the sauce and vegetables, about 3-4 minutes.
  7. Remove from heat and garnish with chopped green onions, cilantro, and sesame seeds before serving.
