- Brown lentils - 150 grams
- Water - 500 ml
- Cooked quinoa - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Green onions - 2, chopped
- Carrot - 1 small, grated
- Panko breadcrumbs - 50 grams
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2 pieces
- Kimchi - 100 grams (for topping)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the brown lentils under cold water and combine them with 500 ml of water in a pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain excess water if needed.
- In a large mixing bowl, mash the cooked lentils with a fork or potato masher until slightly smooth, leaving some texture.
- Add the cooked quinoa, minced garlic, grated ginger, soy sauce, gochujang, chopped green onions, grated carrot, and panko breadcrumbs to the mashed lentils. Mix well until all ingredients are combined.
- Form the mixture into two burger patties, ensuring they hold together. If the mixture is too wet, add a bit more panko breadcrumbs.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- To assemble the burgers, place each patty on a burger bun, top with kimchi, and sprinkle with sesame seeds. Serve immediately.
