Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cornstarch - 2 tablespoons
  • Panko breadcrumbs - 1/2 cup
  • Burger buns - 2
  • Lettuce leaves - 2
  • Kimchi - 100 grams
  • Carrot (shredded) - 50 grams
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions (sliced) - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them in a large bowl.
  3. In a separate bowl, mix together the olive oil, soy sauce, gochujang, garlic powder, ground ginger, and black pepper.
  4. Pour the sauce over the cauliflower florets and toss until they are evenly coated.
  5. Sprinkle cornstarch over the cauliflower and mix well, then add panko breadcrumbs and toss until everything is well combined.
  6. Spread the cauliflower mixture evenly on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20 minutes, or until the cauliflower is golden and crispy, flipping halfway through.
  8. While the cauliflower is baking, prepare the kimchi slaw by mixing kimchi, shredded carrot, rice vinegar, sesame oil, and sliced green onions in a bowl.
  9. Once the cauliflower is ready, assemble the burgers by placing a few pieces of the cauliflower on the bottom half of each burger bun, adding a layer of lettuce, and topping with the kimchi slaw.
  10. Close the burgers with the top halves of the buns and serve immediately.
