Ingredients

  • Brisket - 500 grams
  • Soy sauce (Kosher) - 60 ml
  • Brown sugar - 30 grams
  • Sesame oil - 15 ml
  • Garlic, minced - 4 cloves
  • Ginger, grated - 1 tablespoon
  • Korean red pepper flakes (gochugaru) - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions, chopped - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Rice (for serving) - 150 grams
  • Mixed vegetables (carrots, bell peppers, zucchini) - 200 grams

Steps

  1. In a bowl, mix the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochugaru, and black pepper to create a marinade.
  2. Place the brisket in a zip-lock bag or a shallow dish, and pour the marinade over it. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or overnight for better flavor).
  3. Preheat your oven to 150°C (300°F). Remove the brisket from the marinade, reserving the marinade for later.
  4. Place the brisket in a baking dish and cover it with aluminum foil. Bake for about 60 minutes, until the meat is tender.
  5. While the brisket is baking, prepare the rice according to package instructions and steam the mixed vegetables until tender.
  6. After 60 minutes, remove the brisket from the oven and pour the reserved marinade over it. Increase the oven temperature to 200°C (400°F) and bake uncovered for an additional 15-20 minutes to caramelize the glaze.
  7. Once done, remove from the oven and let it rest for 5 minutes before slicing against the grain.
  8. Serve the sliced brisket over rice, topped with chopped green onions and sesame seeds, alongside the steamed vegetables.
