Ingredients
- Brisket - 500 grams
- Soy sauce (Kosher) - 60 ml
- Brown sugar - 30 grams
- Sesame oil - 15 ml
- Garlic, minced - 4 cloves
- Ginger, grated - 1 tablespoon
- Korean red pepper flakes (gochugaru) - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onions, chopped - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Rice (for serving) - 150 grams
- Mixed vegetables (carrots, bell peppers, zucchini) - 200 grams
Steps
- In a bowl, mix the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochugaru, and black pepper to create a marinade.
- Place the brisket in a zip-lock bag or a shallow dish, and pour the marinade over it. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or overnight for better flavor).
- Preheat your oven to 150°C (300°F). Remove the brisket from the marinade, reserving the marinade for later.
- Place the brisket in a baking dish and cover it with aluminum foil. Bake for about 60 minutes, until the meat is tender.
- While the brisket is baking, prepare the rice according to package instructions and steam the mixed vegetables until tender.
- After 60 minutes, remove the brisket from the oven and pour the reserved marinade over it. Increase the oven temperature to 200°C (400°F) and bake uncovered for an additional 15-20 minutes to caramelize the glaze.
- Once done, remove from the oven and let it rest for 5 minutes before slicing against the grain.
- Serve the sliced brisket over rice, topped with chopped green onions and sesame seeds, alongside the steamed vegetables.
