Ingredients

  • Avocado - 1 large (250g)
  • Cucumber - 1 medium (150g)
  • Carrot - 1 medium (100g)
  • Cherry tomatoes - 100g
  • Green onion - 2 stalks
  • Sesame oil - 1 tablespoon (15ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Rice vinegar - 1 tablespoon (15ml)
  • Maple syrup - 1 teaspoon (5ml)
  • Sesame seeds - 1 tablespoon (10g)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Dice the avocado into bite-sized pieces.
  2. Peel the cucumber and cut it into thin slices or half-moons.
  3. Peel and julienne the carrot into thin strips.
  4. Halve the cherry tomatoes.
  5. Chop the green onion finely.
  6. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, maple syrup, salt, and black pepper to make the dressing.
  7. In a large mixing bowl, combine the diced avocado, cucumber, carrot, cherry tomatoes, and green onion.
