Steps
- Rinse the konjac noodles under cold water and drain them well.
- In a large skillet, heat sesame oil over medium heat, then add minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
- Add the rinsed konjac noodles to the skillet and stir-fry for 3-4 minutes until heated through.
- Add the soy sauce, rice vinegar, and red pepper flakes (if using) to the skillet, stirring to coat the noodles evenly.
- Toss in the julienned carrot and cucumber, and cook for an additional 2-3 minutes until the vegetables are slightly softened.
