Ingredients

  • Soybeans - 150 grams
  • Water - 1 liter (plus extra for boiling noodles)
  • Noodles (Kongguksu noodles or somyeon) - 200 grams
  • Sesame oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Cucumber - 1 small, julienned
  • Toasted sesame seeds - 1 tablespoon
  • Green onions - 1, finely sliced (for garnish)

Steps

  1. Soak the soybeans in water for at least 4 hours or overnight.
  2. Drain the soaked soybeans and place them in a blender with 1 liter of fresh water. Blend until smooth.
  3. Strain the blended mixture through a fine sieve or cheesecloth to separate the soy milk from the soybean residue. Set the soy milk aside.
  4. In a pot, bring water to a boil and cook the noodles according to package instructions (usually about 5-7 minutes). Drain and rinse under cold water to cool them down.
  5. In a separate bowl, mix the soy milk with sesame oil, minced garlic, and salt to taste. Adjust seasoning as desired.
  6. To serve, divide the cold noodles into two bowls and pour the soy milk mixture over the noodles.
  7. Top with julienned cucumber, toasted sesame seeds, and sliced green onions. Enjoy chilled.
