Ingredients
- Soybeans - 150 grams
- Water - 1 liter (plus extra for boiling noodles)
- Noodles (Kongguksu noodles or somyeon) - 200 grams
- Sesame oil - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - to taste
- Cucumber - 1 small, julienned
- Toasted sesame seeds - 1 tablespoon
- Green onions - 1, finely sliced (for garnish)
Steps
- Soak the soybeans in water for at least 4 hours or overnight.
- Drain the soaked soybeans and place them in a blender with 1 liter of fresh water. Blend until smooth.
- Strain the blended mixture through a fine sieve or cheesecloth to separate the soy milk from the soybean residue. Set the soy milk aside.
- In a pot, bring water to a boil and cook the noodles according to package instructions (usually about 5-7 minutes). Drain and rinse under cold water to cool them down.
- In a separate bowl, mix the soy milk with sesame oil, minced garlic, and salt to taste. Adjust seasoning as desired.
- To serve, divide the cold noodles into two bowls and pour the soy milk mixture over the noodles.
- Top with julienned cucumber, toasted sesame seeds, and sliced green onions. Enjoy chilled.
