Ingredients

  • Udon noodles - 200 grams
  • Kimchi - 150 grams, chopped
  • Sesame oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Green onion - 2, chopped
  • Soy sauce - 1 tablespoon
  • Toasted sesame seeds - 1 tablespoon
  • Spinach - 100 grams, fresh

Steps

  1. Cook the udon noodles according to package instructions; drain and set aside.
  2. In a large pan, heat the sesame oil over medium heat and add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the chopped kimchi and julienned carrot to the pan, stir-frying for about 3-4 minutes until the vegetables start to soften.
  4. Add the cooked udon noodles, spinach, soy sauce, and chopped green onion to the pan, tossing everything together until heated through and well combined, about 2-3 minutes.
  5. Serve hot, garnished with toasted sesame seeds on top.
