Ingredients

  • Firm tofu - 300 grams
  • Kimchi - 100 grams, chopped
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Panko breadcrumbs - ½ cup
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Sliced cucumber - ½ cup
  • Sliced tomato - ½ cup
  • Mayonnaise - 2 tablespoons (optional)

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then crumble it into a mixing bowl.
  2. Add chopped kimchi, green onions, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, salt, and black pepper to the crumbled tofu. Mix until well combined.
  3. Form the mixture into 2 equal patties and coat each patty with panko breadcrumbs on both sides.
  4. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side until golden brown and crispy.
  5. Toast the burger buns lightly in the skillet or oven until golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the crispy tofu patty, sliced cucumber, and tomato. Add mayonnaise if desired, then top with the other half of the bun.
