Ingredients

  • Spaghetti - 200 grams
  • Kimchi - 150 grams, chopped

  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, sliced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1, thinly sliced
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon, toasted
  • Black pepper - to taste

Steps

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the chopped kimchi, soy sauce, and sesame oil to the skillet. Stir-fry for about 3-4 minutes until the kimchi is heated through.
  4. Add the sliced carrot and red bell pepper to the skillet, cooking for another 2-3 minutes until the vegetables are slightly tender.
  5. Stir in the spinach, cooking until it wilts, about 1-2 minutes.
  6. Add the cooked spaghetti to the skillet, tossing everything together until well combined. Season with black pepper to taste.
  7. Serve hot, garnished with sliced green onions and toasted sesame seeds.
