Ingredients

  • Cooked white rice - 1 cup
  • Kimchi - 1/2 cup, chopped
  • Tofu - 100 grams, diced
  • Pork belly or beef - 100 grams, thinly sliced (optional)
  • Water - 1 cup
  • Korean red pepper flakes (gochugaru) - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a medium pot, heat sesame oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. If using, add the pork belly or beef slices and cook until browned, about 3-4 minutes.
  3. Stir in the chopped kimchi and cook for another 2-3 minutes until heated through.
  4. Add the water, gochugaru, soy sauce, and tofu to the pot. Bring to a simmer and let it cook for about 10 minutes.
  5. Taste and adjust seasoning with salt and pepper as needed.
  6. In a serving bowl, place the cooked rice and ladle the kimchi stew over the rice.
  7. Garnish with chopped green onions and serve hot.
