- Cooked white rice - 1 cup
- Kimchi - 1/2 cup, chopped
- Tofu - 100 grams, diced
- Pork belly or beef - 100 grams, thinly sliced (optional)
- Water - 1 cup
- Korean red pepper flakes (gochugaru) - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Salt - to taste
- Pepper - to taste
Steps
- In a medium pot, heat sesame oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- If using, add the pork belly or beef slices and cook until browned, about 3-4 minutes.
- Stir in the chopped kimchi and cook for another 2-3 minutes until heated through.
- Add the water, gochugaru, soy sauce, and tofu to the pot. Bring to a simmer and let it cook for about 10 minutes.
- Taste and adjust seasoning with salt and pepper as needed.
- In a serving bowl, place the cooked rice and ladle the kimchi stew over the rice.
- Garnish with chopped green onions and serve hot.
