- Chopped kimchi - 100 grams
- Almond flour - 50 grams
- Eggs - 2 large

- Olive oil - 2 tablespoons
Steps
- In a mixing bowl, combine the chopped kimchi, almond flour, eggs, green onions, water, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Pour half of the kimchi batter into the skillet, spreading it evenly into a pancake shape.
- Cook for about 3-4 minutes on one side until golden brown, then flip and cook for an additional 2-3 minutes on the other side.
- Remove the pancake from the skillet and repeat the process with the remaining batter, adding more oil to the skillet as needed.
- Serve hot with a dipping sauce of your choice, if desired.
