Ingredients

  • cooked jasmine rice - 2 cups
  • kimchi - 1 cup, chopped
  • green onions - 2, sliced
  • carrot - 1 small, grated
  • red bell pepper - 1/2, diced
  • garlic - 2 cloves, minced
  • soy sauce - 2 tablespoons
  • sesame oil - 1 tablespoon
  • tofu - 150 grams, firm, cubed
  • nori sheets - 2, cut into strips
  • black sesame seeds - 1 tablespoon
  • salt - to taste
  • pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the cooked jasmine rice, chopped kimchi, sliced green onions, grated carrot, diced red bell pepper, and minced garlic.
  3. Add the soy sauce and sesame oil to the rice mixture, stirring well to combine everything evenly.
  4. Fold in the cubed tofu gently so it doesn't break apart.
  5. Season the mixture with salt and pepper to taste.
  6. Transfer the rice mixture into a greased baking dish and spread it out evenly.
  7. Sprinkle the black sesame seeds on top and add the nori strips for extra flavor.
  8. Bake in the preheated oven for 25-30 minutes, or until heated through and slightly crispy on the edges.
  9. Remove from the oven and let it cool for a few minutes before serving.
