Ingredients

  • cooked brown rice - 2 cups
  • kimchi - 1 cup, chopped
  • green onions - 2, chopped
  • carrot - 1 small, grated
  • frozen peas - 1/2 cup
  • garlic - 2 cloves, minced
  • sesame oil - 1 tablespoon
  • soy sauce - 1 tablespoon
  • egg - 2, beaten
  • salt - to taste
  • pepper - to taste
  • sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the chopped kimchi and cook for 2-3 minutes until heated through.
  4. Add the grated carrot and frozen peas, cooking for another 2 minutes.
  5. Push the kimchi mixture to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  6. Combine the eggs with the kimchi mixture, then add the cooked brown rice.
  7. Drizzle soy sauce over the rice and mix everything together, cooking for an additional 3-5 minutes until well combined and heated through.
  8. Add chopped green onions and season with salt and pepper to taste.
