- Whole wheat noodles - 200 grams
- Kimchi - 150 grams, chopped

- Zucchini - 1 medium, julienned
- Green onions - 2, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Eggs - 2, beaten
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the whole wheat noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add the chopped kimchi, julienned carrot, red bell pepper, and zucchini to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked.
- Add the cooked noodles to the skillet along with soy sauce, sesame oil, and green onions. Toss everything together until well combined and heated through, about 2-3 minutes.
- Season with salt and black pepper to taste. Sprinkle with toasted sesame seeds before serving.
