Ingredients

  • Whole wheat noodles - 200 grams

  • Zucchini - 1 medium, julienned
  • Green onions - 2, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Eggs - 2, beaten
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the whole wheat noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the chopped kimchi, julienned carrot, red bell pepper, and zucchini to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
  4. Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked.
  5. Add the cooked noodles to the skillet along with soy sauce, sesame oil, and green onions. Toss everything together until well combined and heated through, about 2-3 minutes.
  6. Season with salt and black pepper to taste. Sprinkle with toasted sesame seeds before serving.
