Ingredients

  • Cooked quinoa - 100 grams
  • Chickpeas - 100 grams, drained and rinsed
  • Kimchi - 100 grams, chopped
  • Green onion - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Coriander - 1 teaspoon, ground
  • Flour - 2 tablespoons (or as needed)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, preferably whole grain
  • Avocado - 1, sliced
  • Lettuce leaves - 2
  • Sriracha sauce - for serving (optional)

Steps

  1. In a large bowl, mash the chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, chopped kimchi, green onion, minced garlic, grated ginger, soy sauce, sesame oil, ground coriander, salt, and black pepper to the bowl. Mix until well combined.
  3. Gradually add flour to the mixture until it holds together but is not overly sticky. You may need more or less flour depending on the moisture of the kimchi.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
  6. Toast the burger buns in the same skillet until lightly golden.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the patty, slices of avocado, and a drizzle of sriracha sauce if desired. Top with the other half of the bun.
  8. Serve immediately.
