Kimchi Burger

- Cooked quinoa - 100 grams
- Chickpeas - 100 grams, drained and rinsed
- Kimchi - 100 grams, chopped
- Green onion - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Coriander - 1 teaspoon, ground
- Flour - 2 tablespoons (or as needed)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, preferably whole grain
- Avocado - 1, sliced
- Lettuce leaves - 2
- Sriracha sauce - for serving (optional)
Steps
- In a large bowl, mash the chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, chopped kimchi, green onion, minced garlic, grated ginger, soy sauce, sesame oil, ground coriander, salt, and black pepper to the bowl. Mix until well combined.
- Gradually add flour to the mixture until it holds together but is not overly sticky. You may need more or less flour depending on the moisture of the kimchi.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- Toast the burger buns in the same skillet until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the patty, slices of avocado, and a drizzle of sriracha sauce if desired. Top with the other half of the bun.
- Serve immediately.
