Ingredients

  • Cooked Jasmine rice - 2 cups
  • Kimchi (well-fermented) - 1 cup, chopped
  • Green onions - 2, sliced
  • Carrot - 1 small, julienned
  • Garlic - 2 cloves, minced
  • Sesame oil - 2 tablespoons
  • Soy sauce (gluten-free) - 1 tablespoon
  • Eggs - 2
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a large skillet, heat 1 tablespoon of sesame oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the chopped kimchi and julienned carrot. Cook for 3-5 minutes until the vegetables are softened.
  4. Add the cooked Jasmine rice to the skillet and mix thoroughly with the kimchi and vegetables.
  5. Drizzle in the gluten-free soy sauce and the remaining 1 tablespoon of sesame oil. Stir to combine and heat through for another 2-3 minutes.
  6. In a separate small pan, fry the eggs sunny-side up or to your liking.
  7. Season the kimchi rice with salt and black pepper to taste.
  8. Serve the kimchi bap in bowls, topped with a fried egg, sliced green onions, and a sprinkle of sesame seeds.
