- Cooked Jasmine rice - 2 cups
- Kimchi (well-fermented) - 1 cup, chopped
- Green onions - 2, sliced
- Carrot - 1 small, julienned
- Garlic - 2 cloves, minced
- Sesame oil - 2 tablespoons
- Soy sauce (gluten-free) - 1 tablespoon
- Eggs - 2
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- In a large skillet, heat 1 tablespoon of sesame oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the chopped kimchi and julienned carrot. Cook for 3-5 minutes until the vegetables are softened.
- Add the cooked Jasmine rice to the skillet and mix thoroughly with the kimchi and vegetables.
- Drizzle in the gluten-free soy sauce and the remaining 1 tablespoon of sesame oil. Stir to combine and heat through for another 2-3 minutes.
- In a separate small pan, fry the eggs sunny-side up or to your liking.
- Season the kimchi rice with salt and black pepper to taste.
- Serve the kimchi bap in bowls, topped with a fried egg, sliced green onions, and a sprinkle of sesame seeds.
