Ingredients
- Chicken thighs - 400 grams, boneless and skinless
- Cauliflower - 300 grams, riced
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Erythritol - 1 tablespoon (or sweetener of choice)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, combine soy sauce, gochujang, erythritol, minced garlic, and grated ginger to create the marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade. Mix well and let it marinate for at least 15 minutes.
- While the chicken is marinating, heat 1 tablespoon of olive oil in a pan over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes until tender. Season with salt and pepper, then set aside.
- In the same pan, add the remaining tablespoon of olive oil. Remove the chicken from the marinade (reserving the marinade) and add the chicken pieces to the pan. Cook for about 8-10 minutes, until the chicken is cooked through and browned.
- Pour the reserved marinade into the pan with the chicken and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
- To serve, place the sautéed cauliflower rice on plates and top with the Yangnyeom chicken. Garnish with chopped green onions and sesame seeds.
