Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Cauliflower - 300 grams, riced
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Erythritol - 1 tablespoon (or sweetener of choice)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, combine soy sauce, gochujang, erythritol, minced garlic, and grated ginger to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade. Mix well and let it marinate for at least 15 minutes.
  3. While the chicken is marinating, heat 1 tablespoon of olive oil in a pan over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes until tender. Season with salt and pepper, then set aside.
  4. In the same pan, add the remaining tablespoon of olive oil. Remove the chicken from the marinade (reserving the marinade) and add the chicken pieces to the pan. Cook for about 8-10 minutes, until the chicken is cooked through and browned.
  5. Pour the reserved marinade into the pan with the chicken and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  6. To serve, place the sautéed cauliflower rice on plates and top with the Yangnyeom chicken. Garnish with chopped green onions and sesame seeds.
