Ingredients
- Firm tofu - 300 grams
- Broccoli florets - 100 grams
- Bell pepper (red) - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (or coconut aminos for keto) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Red pepper flakes - 1 teaspoon (optional)
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt and pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut into bite-sized cubes.
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the cubed tofu to the skillet and fry until golden brown on all sides, about 8-10 minutes. Remove tofu and set aside.
- In the same skillet, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the broccoli florets, sliced bell pepper, and zucchini to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Return the fried tofu to the skillet and pour in the soy sauce (or coconut aminos) and red pepper flakes if using. Toss everything together and cook for an additional 2-3 minutes.
- Season with salt and pepper to taste, then remove from heat.
- Garnish with chopped green onions and sesame seeds before serving.
