Ingredients

  • Firm tofu - 300 grams
  • Broccoli florets - 100 grams
  • Bell pepper (red) - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (or coconut aminos for keto) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Red pepper flakes - 1 teaspoon (optional)
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt and pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut into bite-sized cubes.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat.
  3. Add the cubed tofu to the skillet and fry until golden brown on all sides, about 8-10 minutes. Remove tofu and set aside.
  4. In the same skillet, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  5. Add the broccoli florets, sliced bell pepper, and zucchini to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  6. Return the fried tofu to the skillet and pour in the soy sauce (or coconut aminos) and red pepper flakes if using. Toss everything together and cook for an additional 2-3 minutes.
  7. Season with salt and pepper to taste, then remove from heat.
  8. Garnish with chopped green onions and sesame seeds before serving.
