Ingredients
- Firm tofu - 300 grams
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Broccoli florets - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
Steps
- Press the tofu to remove excess moisture. Cut it into bite-sized cubes.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced red bell pepper, zucchini, and broccoli. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
- Return the tofu to the skillet and pour in the soy sauce, sesame oil, and red pepper flakes. Toss everything together and cook for an additional 2-3 minutes until heated through.
- Garnish with chopped green onions and sesame seeds before serving.
