Ingredients

  • Firm tofu - 300 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Press the tofu to remove excess moisture. Cut it into bite-sized cubes.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the sliced red bell pepper, zucchini, and broccoli. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
  5. Return the tofu to the skillet and pour in the soy sauce, sesame oil, and red pepper flakes. Toss everything together and cook for an additional 2-3 minutes until heated through.
  6. Garnish with chopped green onions and sesame seeds before serving.
