Ingredients

  • Silken tofu - 300 grams
  • Chicken broth - 500 ml
  • Zucchini - 100 grams, sliced
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Green onions - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Red bell pepper - 50 grams, sliced
  • Eggs - 2 large
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the sliced zucchini, mushrooms, and red bell pepper to the pot. Sauté for another 3-4 minutes until the vegetables soften slightly.
  3. Stir in the gochugaru and soy sauce, mixing well to coat the vegetables.
  4. Pour in the chicken broth and bring the mixture to a gentle boil. Reduce heat and let it simmer for about 5 minutes.
  5. Carefully add the silken tofu, breaking it into chunks as you add it to the pot. Allow it to warm through for another 5 minutes, being careful not to stir too much to keep the tofu intact.
  6. Season the stew with salt and black pepper to taste. Taste and adjust the seasoning as needed.
  7. Just before serving, crack an egg into the stew for each serving. Allow the eggs to poach gently in the hot broth for about 2-3 minutes until the whites are set but yolks remain runny.
