- Silken tofu - 300 grams
- Chicken broth - 500 ml
- Zucchini - 100 grams, sliced
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Green onions - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Red bell pepper - 50 grams, sliced
- Eggs - 2 large
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchini, mushrooms, and red bell pepper to the pot. Sauté for another 3-4 minutes until the vegetables soften slightly.
- Stir in the gochugaru and soy sauce, mixing well to coat the vegetables.
- Pour in the chicken broth and bring the mixture to a gentle boil. Reduce heat and let it simmer for about 5 minutes.
- Carefully add the silken tofu, breaking it into chunks as you add it to the pot. Allow it to warm through for another 5 minutes, being careful not to stir too much to keep the tofu intact.
- Season the stew with salt and black pepper to taste. Taste and adjust the seasoning as needed.
- Just before serving, crack an egg into the stew for each serving. Allow the eggs to poach gently in the hot broth for about 2-3 minutes until the whites are set but yolks remain runny.
