  • Sesame seeds - 10 grams (for garnish)

Steps

  1. In a mixing bowl, combine glutinous rice flour, erythritol, and a pinch of salt.
  2. In a separate bowl, mix coconut milk, water, and vanilla extract until well combined.
  3. Gradually pour the wet mixture into the dry ingredients, stirring continuously until a smooth batter forms.
  4. Grease a small, microwave-safe dish or silicone mold with a little coconut oil.
  5. Pour the batter into the prepared dish/mold and smooth the top with a spatula.
  6. Cover the dish with a microwave-safe lid or wrap it with plastic wrap.
  7. Microwave on high for 5 minutes, then check for doneness; if needed, cook in 1-minute intervals until the center is set.
  8. Once cooked, let it cool for a few minutes before carefully removing it from the dish/mold.
  9. Cut the tteok into small squares or desired shapes and sprinkle with sesame seeds for garnish.
