Steps
- In a mixing bowl, combine glutinous rice flour, erythritol, and a pinch of salt.
- In a separate bowl, mix coconut milk, water, and vanilla extract until well combined.
- Gradually pour the wet mixture into the dry ingredients, stirring continuously until a smooth batter forms.
- Grease a small, microwave-safe dish or silicone mold with a little coconut oil.
- Pour the batter into the prepared dish/mold and smooth the top with a spatula.
- Cover the dish with a microwave-safe lid or wrap it with plastic wrap.
