- Psyllium husk - 10 grams
- Boiling water - 100 ml
- Erythritol - 30 grams
- Coconut oil - 15 grams
- Chia seeds - 10 grams
- Walnuts - 30 grams, finely chopped
- Sesame seeds - 10 grams
- Vanilla extract - 1 teaspoon
- Pinch of salt
Steps
- In a mixing bowl, combine almond flour, psyllium husk, erythritol, and a pinch of salt.
- Add boiling water and melted coconut oil to the dry ingredients, mixing until a dough forms.
- Let the dough cool slightly, then knead it until smooth.
- In another bowl, mix chopped walnuts, chia seeds, sesame seeds, and vanilla extract to create the filling.
- Divide the dough into equal portions (about 30 grams each) and flatten each piece into a disc.
- Place a small spoonful of the filling in the center of each disc, then fold the dough over to encase the filling, pinching the edges to seal.
- Shape each filled dough into a half-moon shape and place them on a steamer basket lined with parchment paper.
- Steam the songpyeon over boiling water for about 20 minutes until they are cooked and chewy.
- Remove from the steamer and let cool slightly before serving.
