Ingredients

  • Almond flour - 120 grams
  • Psyllium husk - 10 grams
  • Boiling water - 100 ml
  • Erythritol - 30 grams
  • Coconut oil - 15 grams
  • Chia seeds - 10 grams
  • Walnuts - 30 grams, finely chopped
  • Sesame seeds - 10 grams
  • Vanilla extract - 1 teaspoon
  • Pinch of salt

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, erythritol, and a pinch of salt.
  2. Add boiling water and melted coconut oil to the dry ingredients, mixing until a dough forms.
  3. Let the dough cool slightly, then knead it until smooth.
  4. In another bowl, mix chopped walnuts, chia seeds, sesame seeds, and vanilla extract to create the filling.
  5. Divide the dough into equal portions (about 30 grams each) and flatten each piece into a disc.
  6. Place a small spoonful of the filling in the center of each disc, then fold the dough over to encase the filling, pinching the edges to seal.
  7. Shape each filled dough into a half-moon shape and place them on a steamer basket lined with parchment paper.
  8. Steam the songpyeon over boiling water for about 20 minutes until they are cooked and chewy.
  9. Remove from the steamer and let cool slightly before serving.
