Ingredients
- Konjac rice - 100g
- Water - 1 liter
- Fresh ginger - 20g, sliced
- Stevia - 2 tablespoons (or to taste)
- Salt - a pinch
- Toasted sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the konjac rice under cold water and drain it thoroughly.
- In a pot, bring 1 liter of water to a boil. Add the rinsed konjac rice and sliced ginger.
- Reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally, until the konjac rice is tender.
- Remove from heat and let the mixture cool slightly. Strain out the ginger slices.
- Stir in stevia and a pinch of salt, adjusting sweetness to taste.
- Refrigerate for at least 1 hour to chill the Sikhye.
- Serve in bowls or glasses, garnished with toasted sesame seeds.
