Ingredients

  • Konjac rice - 100g
  • Water - 1 liter
  • Fresh ginger - 20g, sliced
  • Stevia - 2 tablespoons (or to taste)
  • Salt - a pinch
  • Toasted sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the konjac rice under cold water and drain it thoroughly.
  2. In a pot, bring 1 liter of water to a boil. Add the rinsed konjac rice and sliced ginger.
  3. Reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally, until the konjac rice is tender.
  4. Remove from heat and let the mixture cool slightly. Strain out the ginger slices.
  5. Stir in stevia and a pinch of salt, adjusting sweetness to taste.
  6. Refrigerate for at least 1 hour to chill the Sikhye.
  7. Serve in bowls or glasses, garnished with toasted sesame seeds.
