Ingredients

  • Pork belly - 300 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Butter - 1 tablespoon
  • Lettuce leaves - 100 grams (for wrapping)
  • Cucumber - 100 grams, thinly sliced
  • Radish - 50 grams, thinly sliced
  • Green onion - 2, chopped
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 teaspoon (optional)
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Preheat a grill pan or skillet over medium-high heat.
  2. While the pan is heating, slice the pork belly into thin strips.
  3. In a small bowl, mix the salt, black pepper, minced garlic, and sesame oil together.
  4. Rub the mixture evenly over the pork belly strips.
  5. Once the pan is hot, add the pork belly strips and cook for 3-4 minutes on each side, or until crispy and golden brown.
  6. Remove the cooked pork from the pan and let it rest for a few minutes.
  7. In the same pan, add butter and let it melt before adding the cucumber, radish, and chopped green onion. Sauté for 2 minutes until slightly softened.
  8. Prepare the dipping sauce by mixing soy sauce and gochujang in a small bowl.
  9. To serve, place a piece of pork belly on a lettuce leaf, add some sautéed vegetables, and drizzle with the dipping sauce. Wrap the lettuce around the filling and enjoy!
  10. Garnish with sesame seeds before serving.
