Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 200 grams, thinly sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chicken broth - 500 ml
  • Green onions - 2, chopped
  • Keto-friendly hot pepper flakes - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Boiled egg - 2, halved

Steps

  1. Heat sesame oil in a large pot over medium heat and sauté minced garlic and grated ginger until fragrant.
  2. Add the sliced chicken breast to the pot, cooking until it is no longer pink, about 5-7 minutes.
  3. Stir in the shiitake mushrooms and cook for an additional 3 minutes until softened.
  4. Pour in the chicken broth and soy sauce, bringing the mixture to a simmer.
  5. Add the spiralized zucchini and hot pepper flakes, cooking for another 5 minutes until the zucchini is tender but not mushy.
  6. Season with salt and black pepper to taste, adjusting the flavor as desired.
  7. Serve the Keto Ramyeon in bowls, topping each with a halved boiled egg and chopped green onions.
