  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Erythritol - 1 tablespoon

  • Red pepper flakes - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat.
  3. In a bowl, mix soy sauce, sesame oil, minced garlic, grated ginger, erythritol, red pepper flakes, salt, and black pepper to create a marinade.
  4. Rub the marinade all over the pork belly, making sure to get it into the scored skin and the meat.
  5. Place the pork belly on a roasting rack in a baking tray, skin side up, and roast in the preheated oven for 30 minutes.
  6. After 30 minutes, increase the oven temperature to 220°C (425°F) and roast for an additional 10 minutes, or until the skin is crispy.
  7. Remove the pork belly from the oven and let it rest for 5 minutes before slicing.
  8. Serve warm, garnished with chopped green onions.
