Ingredients

  • Coconut milk - 400 ml
  • Erythritol - 2 tablespoons
  • Unsweetened almond milk - 200 ml
  • Sugar-free red bean paste - 100 grams
  • Chia seeds - 2 tablespoons
  • Keto-friendly fruit (e.g., berries) - 100 grams
  • Unsweetened shredded coconut - 2 tablespoons
  • Ice cubes - 2 cups

Steps

  1. In a small saucepan, combine coconut milk and erythritol over medium heat, stirring until the erythritol is dissolved. Remove from heat and let it cool.
  2. In a bowl, mix the almond milk and chia seeds, stirring well. Allow it to sit for about 10 minutes until it thickens.
  3. While the chia mixture is thickening, prepare the ice by blending the ice cubes in a blender until finely crushed.
  4. Once the coconut milk mixture has cooled, layer the crushed ice into serving bowls.
  5. Spoon the thickened chia mixture over the ice, followed by the sugar-free red bean paste.
