Ingredients
- Chicken Thighs - 200 grams
- Shrimp - 100 grams
- Daikon Radish - 100 grams
- Shiitake Mushrooms - 50 grams
- Eggs - 2 large
- Kelp Noodles - 100 grams
- Soy Sauce (or Tamari for gluten-free) - 2 tablespoons
- Sesame Oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green Onions - 2, chopped
- Water - 1 liter
- Salt - to taste
- Black Pepper - to taste
Steps
- In a large pot, bring 1 liter of water to a boil and add the chicken thighs. Cook for about 15 minutes until fully cooked, then remove and set aside.
- In the same pot, add sliced daikon radish, shiitake mushrooms, minced garlic, and grated ginger. Simmer for 10 minutes until vegetables are tender.
- Add the soy sauce, sesame oil, and kelp noodles to the pot. Stir well and simmer for an additional 5 minutes.
- While the soup is simmering, hard boil the eggs in a separate pot for 8-10 minutes, then cool in ice water, peel, and set aside.
- Cut the cooked chicken into bite-sized pieces and add them back into the pot along with the shrimp. Cook for another 5 minutes until shrimp are pink and cooked through.
- Season the broth with salt and black pepper to taste. Serve hot, garnished with chopped green onions and halved hard-boiled eggs.
