Ingredients

  • Chicken Thighs - 200 grams
  • Shrimp - 100 grams
  • Daikon Radish - 100 grams
  • Shiitake Mushrooms - 50 grams
  • Eggs - 2 large
  • Kelp Noodles - 100 grams
  • Soy Sauce (or Tamari for gluten-free) - 2 tablespoons
  • Sesame Oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green Onions - 2, chopped
  • Water - 1 liter
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. In a large pot, bring 1 liter of water to a boil and add the chicken thighs. Cook for about 15 minutes until fully cooked, then remove and set aside.
  2. In the same pot, add sliced daikon radish, shiitake mushrooms, minced garlic, and grated ginger. Simmer for 10 minutes until vegetables are tender.
  3. Add the soy sauce, sesame oil, and kelp noodles to the pot. Stir well and simmer for an additional 5 minutes.
  4. While the soup is simmering, hard boil the eggs in a separate pot for 8-10 minutes, then cool in ice water, peel, and set aside.
  5. Cut the cooked chicken into bite-sized pieces and add them back into the pot along with the shrimp. Cook for another 5 minutes until shrimp are pink and cooked through.
  6. Season the broth with salt and black pepper to taste. Serve hot, garnished with chopped green onions and halved hard-boiled eggs.
