- Zucchini - 2 medium
- Beef broth - 500 ml

- Rice vinegar - 1 tablespoon
- Hard-boiled eggs - 2
- Cucumber - 1 small, julienned
- Radish (daikon) - 50 grams, julienned
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon

Steps
- Spiralize the zucchinis using a spiralizer or a vegetable peeler to create noodle-like strands.
- In a pot, bring the beef broth to a gentle simmer, then add soy sauce, sesame oil, rice vinegar, salt, and pepper to taste. Let it simmer for 10 minutes.
- While the broth is simmering, prepare the toppings: hard-boil the eggs, julienne the cucumber and radish, and chop the green onions.
- To serve, divide the zucchini noodles into two bowls and ladle the hot broth over them.
- Top each bowl with sliced hard-boiled eggs, cucumber, radish, and sprinkle with green onions and sesame seeds.
