Ingredients

  • Zucchini - 2 medium
  • Beef broth - 500 ml
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Hard-boiled eggs - 2
  • Cucumber - 1 small, julienned
  • Radish (daikon) - 50 grams, julienned
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchinis using a spiralizer or a vegetable peeler to create noodle-like strands.
  2. In a pot, bring the beef broth to a gentle simmer, then add soy sauce, sesame oil, rice vinegar, salt, and pepper to taste. Let it simmer for 10 minutes.
  3. While the broth is simmering, prepare the toppings: hard-boil the eggs, julienne the cucumber and radish, and chop the green onions.
  4. To serve, divide the zucchini noodles into two bowls and ladle the hot broth over them.
  5. Top each bowl with sliced hard-boiled eggs, cucumber, radish, and sprinkle with green onions and sesame seeds.
