Ingredients

  • Dried anchovies - 50 grams
  • Shiitake mushrooms - 50 grams, sliced
  • Zucchini - 100 grams, julienned
  • Radish - 100 grams, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Korean chili flakes (gochugaru) - 1 teaspoon
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Water - 600 milliliters
  • Green onions - 2, chopped for garnish
  • Black pepper - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
  2. Add the dried anchovies and cook for about 2-3 minutes until they are slightly crispy.
  3. Pour in the water and bring to a boil. Once boiling, reduce the heat to a simmer.
  4. Add the sliced shiitake mushrooms, radish, and zucchini. Cook for 10 minutes, or until the radish is tender.
  5. Stir in the soy sauce and Korean chili flakes, letting it simmer for another 5 minutes.
  6. Season with black pepper to taste and remove from heat.
  7. Ladle the stew into bowls and garnish with chopped green onions before serving.
